We always suggest using a double boiler to melt your Chocoley Chocolate, but if you don't already have one, finding one can be a daunting task.

Okay, so your probably asking, "what in the world is this Soup Kettle doing on Chocoley's website?"
We have searched high and low, spoken with chocolate professionals from coast to coast and received recommendations from chocolate dipping pros.
Next, we tested this baby in our own kitchen and quite frankly, we're impressed.
While definitely not perfect and clearly not designed for chocolate, this is the "food warmer" with the most positive attributes we could find.
Here are the Pros & Cons:
Pros:

When you get the hang of controlling the temperature you can maintain the melted chocolate for as long a period of time as you can monitor the temperature and occasionally stir the chocolate.
Cons:
No On/Off Power Switch, requiring you to "pull the plug" to shut off the heat (of course, this can be remedied by plugging it into a surge suppresser with a power switch);
Additional inserts/bowls are not available;
Can easily overheat real chocolate (even easier to overheat compound chocolate) if you don't use the lowest temperature setting;
Infinite Temperature controls, no thermostat;
Requires continuous temperature monitoring with a thermometer;
Requires frequent stirring;

When working with real or compound chocolate, for optimal results, you must reach and then maintain the proper temperatures.
What's the difference between a tempering machine and a chocolate melter/warmer? A tempering machine is automated, whereas a melter/warmer requires you to manually go through the steps to bring up the temperature, then lower the temperature, and then maintain the temperature. When using a melter/warmer, it's absolutely necessary to utilize a chocolate thermometer for temperature accuracy, and you must stir the chocolate. When using a tempering machine, the machine automatically reads and adjusts the temperature for you and continuously stirs the chocolate.
For small batches of chocolate when making candy or for dipping smaller items, we recommend the ChocoVision or ACMC Tempering Machines. These machines are designed for melting and maintaining small batches of both real chocolate (in temper) or compound chocolate (at working temperature). Their bowls are rather shallow in depth, making it difficult to dip large items such as frozen bananas, ice cream bars or pretzel rods.
For larger batches of chocolate when making candy or for dipping larger items, we have one reasonably priced solution. The Stainless Steel Soup Kettle will melt and hold at temperature for long periods of time.
