Fountain Chocolate FAQ
1. What’s the difference between Chocoley’s Just Melt It! and store bought chocolate?
Crafted with the highest quality ingredients, Just Melt It! chocolate fountain chocolate is substantially different than Nestle, Hershey and Ghirardelli. Nestle, Hershey and Ghirardelli are manufactured much thicker, requiring large quantities of vegetable oil in order to flow properly in a chocolate fountain. Adding oil is not only a messy and cumbersome mixing process that requires varying amounts of oil from chocolate to chocolate, but a mistake in the mixing process can result in a ruined batch of chocolate or inconsistent flow in the fountain. Also, adding oil absorbs the wonderful aroma and dulls the flavor.
Scientifically, the thickness of chocolate in the melted state is measured in Viscosity on the McMichael Scale, with water being 1 Viscosity and other liquids being the number of times the thickness of water (ie. something that is 100 Viscosity is 100 times the thickness of water). Just Melt It! dark and milk is produced at 30 Viscosity and Just Melt It! white is produced at 40 Viscosity. Nestle, Hershey and Ghirardelli produce their chips at 400-450 Viscosity. That’s why the chips in a chocolate chip cookie retain their shape during baking.
2. What’s the difference between Just Melt It! chocolate fountain chocolate and other “chocolate fountain chocolates”?
In a word – quality. Don’t just take our word for it. Food service professionals and consumers agree. During a taste test conducted in Washington, D.C. at the Event Source/Cater Source tradeshow, caterers and event planners had an 80% preference of Chocoley Just Melt It! chocolate fountain chocolate over Sephra/Callebaut.
In an independent taste test conducted in Provo, Utah, hundreds of consumers tasted both Just Melt It! and Sephra/Callebaut. Once again, Just Melt It! was preferred hands-down over the competition with over 72% choosing Just Melt It!.
Chocoley’s microwave safe reusable plastic tubs are another significant advantage over Sephra/Callebaut bags, providing a more convenient method of melting without wasted chocolate trapped in the bags. Also, you can store leftover chocolate in our tubs.
3. I’ve seen “fondue chocolate” in retail stores. Can I use it in my chocolate fountain?
No. While these products are formulated for the fondue pot, they are not produced for use in a chocolate fountain and would require adding varying amounts of vegetable oil. Why pay a premium price for a product that won’t work properly to begin with?
4. How should I melt my Just Melt It! chocolate fountain chocolate?
Just Melt It! chocolate fountain chocolate can be melted in a variety of ways…
Microwave it directly in the plastic tubs by removing the lid from the tub and microwave open tub on HALF power for 3 minutes, stir with a rubber spatula, then microwave an additional 1-2 minutes on HALF power, as needed, until chocolate is fully melted. Stir Frequently. These directions are on the tub.
Just Melt It! can also be melted in a double boiler, crock pot or steam table. Regardless of method of melting, special care should be taken to avoid adding any moisture to the chocolate. Additionally, white chocolate burns easily, so always melt on a low heat and stir frequently.
5. How should I store my Just Melt It! chocolate fountain chocolate?
It’s best to store chocolate at approximately 70°F. Avoid keeping the chocolate near heating ducts, avoid freezing and avoid contact with moisture.
6. How many people will each tub of Just Melt It! fountain chocolate serve?
In general, each 2.5 lb. tub should serve between 25-30 people, or 300-375 people per 30 lb. case. Of course results may vary by the size of the items being dipped, what else people are eating at the function and whether your guests are total chocoholics. It’s always better to have extra Just Melt It! chocolate fountain chocolate on hand to prevent an uprising.

Please Note: Your fountain manufacturer is calculating that you will be creating additional “chocolate volume” in the form of 30%-40% VEGETABLE OIL. Chocoley’s Just Melt It! DOES NOT REQUIRE THE ADDITION OF OIL, so you will need to start with more Just Melt It! chocolate in order for your fountain to function properly.
Our calculations make sure that you will have enough chocolate to replenish your fountain as people eat so that your fountain will look beautiful and run properly throughout your entire event.
7. What is the shelf life of my Just Melt It! fountain chocolate?
Just Melt It! chocolate fountain chocolate is fresh when you receive it. Milk and white should be used within one year. Dark should be used within two years.
8. Can I re-use my Just Melt It! fountain chocolate?
For commercial functions, Just Melt It! chocolate fountain chocolate can not be re-used for other commercial events due to health concerns. However, many of our business customers give the leftover chocolate to the host/hostess of their catered affairs and the chocolate is fine for personal consumption. Additionally, Just Melt It! used by consumers for use in home chocolate fountains can also be re-used. Great chocolate should never go to waste.
9. What environmental factors will affect my Just Melt It!?
In a perfect world, free of hot or cold days & nights, humidity, precipitation, wind or any other imaginable environmental factors, Just Melt It! is crafted to perform perfectly every time. Unfortunately, we don’t live in a perfect world, but with a little proper planning and common sense, your Just Melt It! will always provide you with optimum results.
First, a little common sense… never use a chocolate fountain outdoors. Fountains are only intended for use inside a building. Rain, wind and insects will ruin your event. Water (or any moisture) does not mix with chocolate and will make the chocolate clump; Wind can blow the flowing chocolate everywhere, usually all over your guest’s clothes; and insects such as wasps, flies, gnats, etc., all seem to love chocolate as much as humans.
Inside a building, avoid setting up your fountain directly below heating or A/C ducts. Cool air blowing on the fountain can cool the chocolate, causing it to thicken and not flow properly. Warm air blowing on the fountain won’t hurt the performance of the operating fountain, but never store your Just Melt It! near a heating duct.
Humidity, a factor difficult to control, can play the greatest havoc with chocolate. Humidity can actually raise the Viscosity. If you are using your Just Melt It! during extreme humidity, you may need to add a very small amount of vegetable oil- for home units add 1 teaspoon at a time; for commercial fountains add a quarter cup for 20 lbs. of chocolate.
NEVER ADD WATER OR MOISTURE TO CHOCOLATE!!!!!!
Never freeze chocolate as this will often add moisture to the chocolate. Never expose chocolate to extreme hot temperatures as it can burn easily.
10. How far in advance should I order my Just Melt It!?
While we stock all of our products, we encourage you to avoid waiting to the last minute to order. We try to ship all orders received by 4 EST the same day (M-F). Orders received after 4, ship the next business day. We suggest you stock up, so you never run the risk of running out.

11. Can Just Melt It! be used for anything other than chocolate fountains or fondue?
Absolutely! While we created Just Melt It! chocolate fountain chocolate for use in a chocolate fountain, we keep discovering new & unique mouthwatering and out of this world delicious uses for this wonderful chocolate. Do keep in mind, that we have several chocolates that are formulated for specific applications. Yum!!!
12. Can I change the color of my white Just Melt It!?
Creative caterers, chefs and homemakers ask us this question a lot. The answer is yes, but you need to use our oil-based chocolate colorings. Water-based food coloring (the type sold at the grocery store) won’t work- remember water and chocolate don’t mix. Of course, we sell the perfect coloring for chocolate. Get creative, have a powder blue chocolate fountain for Easter, a green chocolate fountain for St. Patrick’s Day, a pink or red chocolate fountain for Valentine’s Day, an orange chocolate fountain for Thanksgiving. Let your imagination run wild, your guests will love it.
13. Can I add flavoring to Just Melt It!?
Yes, but you need to do it carefully and with the correct products. To add flavorings, you need to use products that are designed for use with chocolate. Of course, we sell fabulous chocolate flavorings.
