Why temper couverture chocolate?
Real chocolate contains cocoa butter, which is extracted from the cocoa or cacao bean. Cocoa butter is an expensive ingredient which has some unusual characteristics or quirks. Because of the nature of cocoa butter, real chocolate requires going through a special procedure during the melting process called tempering , which re-establishes the cocoa butter crystals, giving the cooled and finished chocolate the proper sheen, snap and taste.

Additionally, and of vital importance, tempering prevents bloom, where the cocoa butter separates from the cocoa solids and comes to the surface, turning the chocolate whitish or grayish in color. If you are making candy or dipping items that won’t be consumed within a day or so, tempering is absolutely mandatory for all real chocolate.

I just love this chocolate. As a certified chocolatier I give it a two thumbs up! I use it for my truffle centers as well as dipping truffles, once tempered (which isn't as scary as I once thought!). I have a small, but quickly growing candy business and I mostly use Chocoley couverture and ultra couverture chocolates. The results are always professional and scrumptious.
I received a message from someone the other day saying they'd just bitten into one of my chocoaltes they received as a gift and "yummy does not cover it" was their conclusion. They went on to place an order for Christmas!
I have to admit that while I'm not using Chocoley to create irresistible confections, I'm probably somewhere with my feet up just eating it right out of the bag. It's that good.
Of course I will be purchasing this again - I'd be lost without it!

Hot Weather Shipping

If your order is being shipped to a location 78° F or warmer (or if it is warmer than 78° in Alpharetta, GA, typically April - October, where this item will be shipping from) we highly recommend that you add an Insulated Cold Pack, based on the weight of chocolate in your order, to ensure your chocolate doesn't melt while in transit. The large Insulated Cold Pack Shipper chills up to 30 lb of chocolate, so, multiple Case orders would require one large Insulated Cold Pack Shipper per 30 lb Case.

If it is currently necessary to add a cold-pack in order to protect your chocolate from melting you will be given the option to add an insulated cold pack from $4.95 to $8.95 at checkout, or you may choose to accept full responsibility for any melting that occurs in transit and decline this option. (Please note: No returns of melted chocolate will be accepted if an insulated cold-pack is recommended for your order and you decline).
